Marry Me Chicken with Noodles
This is a simple recipe bursting with flavor that is a favorite in the Edlund household!
Yield: 4 people
Equipment
- 1 Course Salt Grinder
- 1 Course Black Pepper Grinder
- 1 Zyliss Garlic Press I LOVE the Zyliss press on Amazon
- 1 Zyliss Restaurant Cheese Grater I'm going to level up your kitchen. Trust me!
Materials
Preparing the Chicken
- 2 Pieces Boneless Chicken Breast I use one pack of costco chicken breast, will feed 4 people
- Salt
- Black Pepper
- All Purpose Flour (Enough to coat the chicken)
Cook Chicken
- 2 Tbsp Olive Oil
- 2 Tbsp Butter
The Sauce 🤌 (Prepare these before you cook to make it go smoothly)
- 4 Cloves Fresh Minced Garlic
- 1 cup Chicken Broth 1 tsp of Original Better Than Bouillon Roasted Chicken
- 1 cup Heavy Cream
- 1/2 cup Shredded Romano Cheese Get the big block from Costco and shred it like Olive Garden and thank me later
- 1 tsp Red Pepper Flakes Go light if you want less heat
- 1/4 tsp Oregano
- 1/4 tsp Thyme
- 1/3 cup Sun Dried Tomatoes I make one jar of these last 3 meals. They are pricey.
The Noodles
- Fettuccine Noodles (Cook the amount that seems appropriate to the amount of chicken you made)
Instructions
Preparing the Chicken
- Start by trimming the chicken. Remove anything you wouldn't want to chew or eat.2 Pieces Boneless Chicken Breast
- Thinly slice the chicken. For me with Costco chicken breast, this means slicing each breast in half to make them cook through faster and easier to eat. In the picture, I used the tenderloins from Costco, however I prefer the chicken breast for this recipe. Give it a light pounding.
- Take your Salt Grinder and Pepper Grinder and coat each side of the chicken. Then coat the chicken in flour. I like doing this in a plate with high edges or a bowl.Salt, All Purpose Flour, Black Pepper
Cook the Chicken
- Start by heating your skillet on medium heat. You want high enough temperature to cook and crisp the chicken, but keep it moving in the pan so it doesn't burn. Olive oil starts to burn at 350 degrees, so keep it below that. No one wants to taste burnt olive oil. (Be patient, good meals are made with love and care, and patience). It should take roughly 4-5 minutes per side.2 Tbsp Olive Oil, 2 Tbsp Butter
- Once the chicken is cooked, put it on a plate and cover with tin foil. It's time to make the sauce.
The Sauce (You can call it a roux if you want to impress your friends)
- Start cooking your noodles. Boil for 8 minutes with salt (Thank me later for starting this now)Fettuccine Noodles
- Turn your heat to medium low. Add your minced garlic to the pan and saute for roughly 1 minute. This is when your house starts to smell good4 Cloves Fresh Minced Garlic
- Add your Chicken Broth and Heavy Cream. Let these come to a simmer, then add your cheese.1 cup Chicken Broth, 1 cup Heavy Cream, 1/2 cup Shredded Romano Cheese
- Let this simmer for a bit(Lets say 2 minutes bubbling), then add your seasonings.1 tsp Red Pepper Flakes, 1/4 tsp Oregano, 1/4 tsp Thyme, 1/3 cup Sun Dried Tomatoes
Plate the Dish
- Add your noodles to the sauce and roll them around, then plate the noodles
- Add your chicken back to the sauce, then plate on the noodles
- Serve with a steak knife for cutting the chicken
